Meatless Monday is a global movement that began in 2003. Over 40 countries have welcomed this day into their culture. It’s the one day out of the week that’s free of meat consumption. Why, you ask? It improves health, since it encourages you to eat more vegetables. It also saves on food resources. Plants are much easier to produce than meat. With all this in mind, we’ll share some delicious recipes for you to enjoy on Monday.

Vegan Sloppy Joes

This is a simple recipe that doesn’t require much effort. The end result is delicious and the whole family will enjoy it together.

Ingredients:

·         Onions, garlic, and green peppers

·         Brown or green lentils

·         Olive oil and vegetable broth

·         Organic ketchup

·         Vegan Worcestershire sauce

·         Spices: mustard powder, onion powder, and chili powder

Put It Together:

·         Prep the veggies (dice the onion, garlic, and green peppers)

·         Sauté the veggies for five minutes

·         Add the rest of the ingredients and let them simmer for about 30 minutes (wait until it forms a thick sauce and the lentils are soft)

·         Stir in the vegan ketchup for extra flavor

·         Serve when you’re ready to eat!

Sweet Potato Chili

Chili is a classic favorite. Don’t worry, though – you won’t miss the meat from this dish. It’s healthy and tasty. A definite “yes!” when the family asks you, “What’s for dinner?”

Ingredients:

·         Red onion

·         Bell peppers

·         Sweet potatoes

·         Garlic cloves

·         Olive oil

·         Diced tomatoes

·         Pinto beans or chili beans

·         Corn

·         Vegetable broth

·         Chili powder

·         Cumin

·         Cayenne pepper

·         Cocoa powder

·         Kosher salt

·         Black pepper

·         Garnishes: hot sauce, sour cream, green onions, or shredded cheese

Put It Together:

·         Dice the onion, green peppers, and sweet potatoes

·         Heat the olive oil in a crockpot

·         Sauté onion, peppers, and sweet potatoes for a few minutes while stirring

·         Add the garlic, tomatoes, beans, corn, vegetable broth, chili powder, cumin, cayenne pepper, cocoa powder, salt, and black pepper

·         Stir, then cover and cook for about 20 minutes

·         After the 20 minutes are up, add the mixture to the chili to thicken

·         Cook for about 10 minutes

·         Season with kosher salt and pepper to taste

·         Divide the chili into serving bowls and garnish

Meatless Mexican Pizza

This is a perfect dish to customize. With the combination of Italian and Mexican cuisine, you’ll love this unique dish. Easy to make and delectable.

Ingredients:

·         Pizza dough

·         Canned refried black beans

·         Cumin

·         Paprika

·         Cayenne

·         Green onion

·         Tomato

·         Jalapeno pepper

·         Corn

·         Mexican cheese blend

·         Kosher salt

·         Cilantro

·         Sour cream

Put It Together:

·         Prepare the dough

·         Preheat your oven

·         Mix the refried beans with water (just a little water)

·         Mix cumin, paprika, and cayenne

·         Dice the tomato, slice the green onion, dice the jalapeno

·         When the oven is ready, dust a pizza peel with flour

·         Stretch the dough into a circle

·         Place the dough on the pizza peel

·         Spread the bean mixture in a thin layer over the dough

·         Sprinkle cheese over the top

·         Add the red onion, tomato, jalapeno, corn, and cilantro

·         Sprinkle kosher salt

·         Bake until the cheese and crust are browned

·         Chop the cilantro, and use the sour cream for garnish
